Struvite crystals: small crystals of ammonium magnesium phosphate, like ground glass. We observe the formation of these crystals in canned tuna, squid, crab, lobster ... "Honeycombing" or Favado: detected after cooking fish (tuna). The cooked meat shows vacuoles (similar schweisfurth to honeycombs). The breakdown of connective tissue (collagen) may result from the action of proteolytic enzymes in the tissue of fish.
